One of the oldest cultivated plants, amaranth was part of the staple diet of the Aztec and Inca civilisations. This grain is rich in calcium, protein and fibre. Suitable for paleo diets owing to it being a seed rather than true grain it is a powerhouse fibre, minerals and vitamins and is delicious and crunchy popped like corn or made like porridge. Once cooked you can add to sauces, salads, stir-fries and pasta for a kick of texture and nutrition.
